Creamy Tarragon Vinaigrette

This is a wonderful tart salad dressing that is very versatile. Use it as the dressing for tarragon potato salad or green bean salad. Drizzle on sliced tomatoes. Use it in a Nicoise type salad of tomatoes, green beans, boiled potatoes and ham or tuna fish.

2 Tbs. tarragon vinegar
2 Tbs. chopped shallots
1 Tbs. Dijon mustard
1 Tbs. mayonnaise
2 Tbs. roughly chopped fresh tarragon
1/4 Tsp. salt
1/4 tsp. freshly ground black pepper
1/4 cup extra-virgin olive oil or canola oil

In a medium mixing bowl, whisk together the vinegar, shallots, mustard, mayonnaise, tarragon, 1/4 tsp. salt, and black pepper. Slowly whisk in the olive oil. Mix it in to the salad of your choice.
